Hi! these panini have been a staple for a while and so soft and healthy we love them, no mixer required, easy to make just a few stirs and a light kneading your done! Today we are looking for not just bread but if we want a more healthy , this recipe uses a handful sunflower seeds, flax seed, pumpkins seeds,chia seeds,
Sunflower,pumpkins,chai,flax seed seeds |
Ingredients:
1 cup of warm water
1 tbs.sugar
12 gr. of fresh yeast or 2 tsp active dry yeast
1 tsp.salt
2 tbs. dried rosemary, dried oregano,dried chives,seeds sunflower, pumpkin, chia, flax seed
2 tbs. olive oil
2 cups of Manitoba flour or "O" type
some flour for kneading
Mix your first three ingredients and let sit for 10 min.
Make a well in your bowl and add the rest of ingredients salt,seeds mix,OVOO,flour and your liquid
that you have let set for 10m min, using just a wooden spoon or a spoon mix the ingredients till a soft ball forms, reverse this onto a floured surface and just knead a little, place back in oiled bowl,cover with plastic wrap and proof till doubled.
I place them in a lit oven with the light on this gives enough heat to proof the dough
When this doubles, punch down form small 100 to 110 gr. panini's, if using a oven stone
place these on a tea towel that you have floured till they double again, when your
stone is ready take the panini very carefully and place them on the stone bake at
220 degrees for 20 -25 min till golden.
or place them on your cookie sheet pan lined with parchment paper cover them with
plastic or a tea towel till doubled and bake as above .
here they are ready to eat! |

I do freeze them because we don't eat all of them at once , I freeze the two at a time and take them out at night or mid day when I know i need them. Also if you are worried about white flours I have made them with wheat or half white, half a wheat flour.
