Crema di Limoncello


Imagine yourself on a hot summer day, or after a family barbecue sipping on this famous Italian liquor, the taste of tart lemons with sweetness! 

Crema di Limoncello 


8 Lemon rinds 
2 liters of milk (8 cups.)(Parmalat shelf-stable whole milk ) OR
(Horizon organic shelf-stable whole milk)
 1 Litre (750ml) of 96 % Every Clear 
1,5 kg.(7 ½ cups) Of sugar 
3 Tbs. of Pure Vanilla 


You only need to peel the lemons without getting too much of the white of the lemon, this will
make it bitter, then if you can get organic lemons it’s better,
but you can still use the normal lemons just make sure to wash them well. 
Place the rinds into a bowl, preferably a glass bowl with a lid, add your 96% proof  everclear
alcohol make sure your lemon rinds are covered, press them down if needed. 


THIS MIXTURE ABOVE STAYS FOR 48 HOURS, THEN YOU ARE READY FOR
THE NEXT STEP 


In a pan place your 1,5 kg.(7 ½ cups) of sugar with the milk and let this heat up, 
DO NO BOILING ! 
When the milk is just warm, you can use a thermometer, it should read  
60 degrees fahrenheit, or you can place a finger into it should be cool.
Proceed to add the liquid you drained from the lemon and alcohol, 
place it in the milk and turn slowly to incorporate them. 


You are now ready to place this mixture into bottles, make sure you close them well,
place them into the freezer till you are ready to use. 
I advise taking  it out at least 5 min before serving or till you can see that it’s creamy again
shaking it a little so that the crystals melt, the glass we use is a small demi one .
This recipe will yield a lot , about 4 litres, I recommend you save the everclear bottle and some
bottles for filling


Enjoy this liquor , it's great in the summer after a good barbecue , after a meal or just to have
drink. 
Ingredients
Peel your lemons being very careful to peel the rind not getting any of the white part it's bitter
go ahead and add your lemon peels in a glass container with a lid
and add your everclear

making sure to cover the lemon peel
after 48 hours drain your lemon peels and set the liquid aside
to your milk in a bowl or directly in your pan add the sugar to the milk stir well
add this mixture to your pan and heat
DO NOT BOIL
just till 60 Fahrenheit
remove from heat be sure its cooled down well
 
when milk mixture is cooled , add your lemon syrup you made with the everclear and lemon rinds and add to milk stirring it well 
decorative bottles are nice you will need a few, these make a great gift !
