Ciambelle Sorane con anice
These are a house favorite! No one can eat just a piece , the wonderful flavor of the anise seed is appealing . I did not know how to make these and to find a recepie is almost impossible. Our elders have passed and took the recepie with them .
Since on every corner of the town is a backery that makes a viraion of one bigger, smaller thinnner , larger but they all have the sameness flavor just like bagels plane is plane you get what I mean.
Since my family is splint up some her in Italy and some in the USA , I was requested to learn before I go back one a year that hey what Ciambelle , did my research watched a lot of you tube vedio' and came up with this one .

Recipe
5 lbs. of flour 00
1/2 cup Anise seed
4 cups of water
2 Tbs. of salt
1 Tbs.of yeast
Place your flour on a surface or in a large bowl
Make a well in the
Add your anise seed , salt, yeast
Slowly add the water one cup at a time mix this mixture making sure you have a firm dough, you can also place this in your hook mixer it will be firm so you might want to need it by hand till you have a well worked dough about 10 min.
Place in a bowl let rise about 1 hours
On a board now you are ready to make a roll about 12 to 14 inch long
Press down making it about 1/4 inch and make your ribbon by using the palm of your hand and fold it to the center press firmly till you get a skirt like look close you ends firmly they will open in the next step .
You can also just make a round circle they will taste the same.
Get a large deep pan fill with water enough so that the ciambella will be covered
When water boils slowly drop your ciambella in it will sink at , about two at a time ,first then come up turn it once and place it on a wire rack to dry this will take about 10 min or so. then you can place in the directly in the oven or by a pizza pan with holes in it do not place on a pan , you can also place it directly on the rack of the oven.
Oven at 350 degrees for around 20 min or till golden in color
You can turn the half way to color the other side
this recepie will make about 14 -14inch ciambelle
For a smaller batch
Recipe
565 gr. of flour 00
2 gr. of yeast
1 1/2 tsp. of anise seed
1 1/4 tsp. salt
240-250 ml. of warm water
Proceed the same way as above make a well in your bowl
add the yeast, anice seed to this add the water in the center
add your salt and finish with the water
the dough must take a very dry and hard elastic apperance
knead till you get this
place a clear wrap and then a clean towel and let
it rise for at least 1 hours,
form your ciambelle, (follow as per above for the skirt )
this recipe will give you 3 small 6 inch or 4 ,4 inch small ones
then have your water boiling so you drop the chiambelle in and take them out place on a cookie rack you will be baking these on it.
Place in a ventilated oven if you don't have one then use a baking pan filled with water on the bottom rack , this will help them get golden and for a small crust.

565 gr. di farina 00
2 gr. di lievito
1 1/2 cucchiaino. di semi di anice
1 1/4 cucchiaino. sale
240-250 ml. di acqua tiepida
Procedere come sopra fare una fontana nella vostra ciotola
aggiungere il lievito, i semi di anice a questo aggiungere l'acqua al centro
aggiungere il vostro sale e terminare con l'acqua
l'impasto deve assumere un aspetto elastico molto secco e duro
impastare fino a prendi questo
posto una pellicola trasparente e poi un asciugamano pulito e lascialo
lievitare per almeno 1 ora,
forma le tue ciambelle, (segui come sopra per la gonna)oppure la fai attorcigliata .
questa ricetta ti darà 3 piccoli da 13 cm. oppure 2 da 15 cm. (circa).
quando li hai pronti, bollire l'acqua in modo da far cadere le ciambelle e tirarle fuori su una griglia per biscotti su cui cuocerai queste.
Mettete in forno ventilato se non ne avete uno poi usate una teglia piena d'acqua sul ripiano inferiore, questo li aiuterà a dorarsi e ad formare una piccola crosti
