 Easy Tomato Soup 
Home made goodness 

With our gardens in the summer months, and the year round winter tomato, you will be surprised on how easy this soup is to make. 

Just a little grilling, a little sautéing, a little blending and you have a great soup, serve hot or cold. 


Ingredients 
for two people 

1 lbs. of tomato's 
1 onion
3 cloves garlic 
1 carrot 
1 stalk of celery
1/4 cup of olive oil 
1-1/12 cups fo stock
(vegetable or chicken/ beef)
1/2 cup heavy cream 
1/2 cup fresh basil 
some leaves for decoration 
some croutons  
salt, pepper to taste 
optional 1 small red pepper 




 

Start off with cutting your tomato's in half place on your cookie sheet, add red pepper if you are adding it, place 3 cloves of garlic around, add olive olio , salt, pepper, cook these for 40 min. at 350 till you see the caramelising of the tomato.


After 40 min or when they are caramelised, add these to your pot where you have sautéed your onion, carrot, celery  in 1/4 cup of olive oil 


Add into this your tomato, add in the juices also, along with your 1 or 1 1/2 cups of stock you choose, depending on how you want it thinner soup of thicker soup,
 simmer this about 5 min. do not boil just a simmer 


Shut off the heat, if you have an immerser or place in a blender or food processor, bring it to a velvety soup consistency, add in 


about 1/2 cup of heavy cream and your 1/2 cup fresh basil re-blend 
you will see a more creamy look 


Here you have it! i added some home made croutons, adjust the seasoning ,
swirl some olive olio and enjoy it!
