Parmigiano Bowls and Crips



Parmigiano Bowls and Crips
This is an easy recipe with just one ingredient,
Parmigiano Reggiano,
this requires that you use only the fresh grated cheese, the prepackages does not work 
Set oven at 350 degrees 
One flat baking sheet with parchment paper or silpat-mat 

Seasoning for the disks 
Fresh Ground Pepper 
Pine nut seeds 
Oregano ½ tsp. 
Sesame Seeds ½ cup 
Chia Seeds ¼ cup 
Paprika 1 Tbs. 
You can use seasoning you will like or just plan 

Recipe for Disks 
2 cups or more of Freshly Grated Parmigiano from block ( no substitute, no pre screaded) 

Grate cheese on your grater on the smaller side, 
If using a round form about 3” place 2 Tbs. of cheese into the form and flatten with fingers 
                                                   2” place 1 ½ tbs. Of cheese the same as above flatten with fingers

If you are using seasonings place them onto the top of these before baking 

You can also just free form them, to get a lacy look without the form 

JUST MAKE SURE YOU LEAVE ABOUT 2 INCH BETWEEN EACH MOUND AND FLATTENED THEM WITH FINGERS . 

BAKE THE DISKS TILL BUBBLY AND THEY ARE GETTING GOLDEN ABOUT 3 -5 MIN.

TAKE OUT PLACE THEM ON A COOL SURFACE, REMOVE TO A COOLING RACK 

Recipe for the Bowls 

Ingredients, same as above only do not use seasoning you will be filling them , place the 2 to 3 tbs. Onto the Silpat mat or parchment paper make sure you keep at least 2 “ apart they will spread. 
The only difference in baking these a lot less about 2- 3 min.,when you see them bubbling go 1 minute more 
And take them out placing them over you cupcake thin or item you choose to make the bowl
Let them cool very well before filling they need to cool down to cold touch. Fill and enjoy !
