SOFT LEMON COOKIES 


 THESE COOKIES ARE A FAMILY FAVORITE 
IT HAS TAKEN ME A LONG TIME TO GET THIS RECIPE 
TO BE EASY TO MAKE, GIVEN TO ME BY A DEAR FRIEND BUT IT 
WAS ALOT OF COOKIES 
I HAVE BROUGHT IT DOWN TO ABOUT 2 DOZEN OR SO 

WELL GET YOUR APRON ON AND GET STARTED 
HAVE A LARGE BOWL 
HAVE A LARGE WOODEN SPOON 
OVEN AT 350° 

Ingredients 

3 eggs 

1 1/2 cups of sugar 

1 cup of milk 

1/4 cup of oil 

3 tsp Baking powder 

1 lemon Rind and juice 

Flour that it picks up start out with about 

3 to 4 cups (explanation below) 


For the topping, an egg wash of just the yolk with 2 tbs. of milk 


Place all the above into a large bowl, slowly adding the 

Flour, your dough must be soft (not hard) it will look like 

You need to add more flour but when you get a soft like dough that you can reverse onto 

A wooden board or counter top adding a little more 

Flour to the board or counter 

Add a little flour needed to 

just to get a good soft dough that you are going to roll out. 



At this point take strips of your dough helping yourself with a little 

Flour just to roll out a 1/2 inch roll cut at about 8 to 10 inches form 

Them into a twist place on parchment paper lined sheet , they will 

Spreed a little so keep about an 1 inch apart

Add your topping place in oven 350 till golden brown 

(i like to say blond brown they will be soft inside and a little hard outside)
