Hi ! now don't get excited if you know me these are not my Famous cookies but they are a runner up.
if you have tasted my Famous cookies you will take one then two then handful and run!
But these are still great biscotti here in Italy for the month of August/September our Hazel nut trees give us a bounty full amount of these great nuts, 100 gr. are 628 calories, and protein 14.9 grams!
Although this recipes only as 1/2 cup they are still great! easy easy to make enjoy them i do with a nice cup of coffee or tea.
Oh by the way if you dip these in a red wine after dinner they are heaven!
DO NOT USE A MIXER! HAND SPOON ONLY!
Recipe
1 1/2 Cups of unbleached Flour (yes you can use Wheat or half and half)
1/2 Cup of Coarsely ground Hazelnuts
1/4 cup hole Hazelnuts or Almonds
1/4 tsp salt
1 1/2 tsp Baking powder
2 Tbsp. of Unsalted Butter
1/2 Cup sugar
1/4 Cup honey
1 Egg
1 Tsp of Vanilla
this recipe will make two 12 " logs

Preheat oven at 325 degrees.
Place parchment paper on your cooking tray.
Combine the first five ingredients, flour, your hazelnuts, salt, baking powder in a bowl set aside.
In another bowl mix by hand, butter, sugar, honey, egg,vanilla till you get a smooth batter, then add your dry ingredients mix well, till this comes together.
Divide the dough into two equal pieces, roll them till you get two 12 " longs, brings these to the pan you lines and space them apart they will flatted somewhat for your logs by pressing forming them into a log about 3 inches or so they will vary but you can shape them .
Bake these for 20-25 min or until firm not too golden but colorful.
Leave them on the pan till slightly cooled 5 min.,when they are cooled but not cold cut them on a diagonal. This will give you the biscotto effect as wide or thin as you like i like to cut them about 1/2 inch to 1 "

Now depending on how you like them softer, harder.... you can place these back into the oven about 2" apart and place them back into the oven for 10-12 min .

When i make them i omit the anise seed just because I'm not a lover of then in sweets, and i do not re bake we like them softer, they will harden because of the honey.
I pack these two at a time in plastic wrap for on the go packed cookie .
