Biscotti al Miele e Farina Integrale
Cookies with Honey and Wheat Flour  

 Italy has an abundance of Wheat Flour still available at local Mills,  the milled flour has some bran in it, the cookie has a certain crunch is an excellent Breakfast or mid afternoon espresso coffee, this cookie pretty much 5  ingredients and healthy using natural products like honey, oil, and the flour. 
The honey flavor comes out of this cookie and then gives the cookie a great texture when it cools its moist. 
I will be updated this as soon as i experiment with oat flour, ground oat, rice flour, kamut flour (Khorasan wheat)
and then re-update this recipe, i can almost see dried cranberries added to this recipe already . 
I made a step by step pictures of all the recipe



Ingredients 
1 3/4 cups of Wheat Flour 
2 tsp. of Backing Powder 
1/3 Cup of Honey
1 egg 
3 Tbs. of oil  
1 tsp of vanilla 



Take your honey and beat in you egg, 
in another bowl place your flour, Baking power 
poor your honey/egg mixture and oil in a well you have formed in the flour 


Mix well with a wooden spoon till it all comes together 
THIS WILL BE A LITTLE SOFT DO NOT WORRY THIS FLOUR WILL THICKEN IN 5 MIN 


Turn this over on a floured surface and lightly knead into a ball 


Place it back into the same bowl and place in fridge for 30 min. so it will roll better 


Roll this dough out on a floured surface making sure even your rolling pin is floured 
roll thin 
Use a cookie form of your desire, i used a cookie cutter making fork marks for decoration 


Bake at 350 for 10 to 15 min till the edges are golden 


Enjoy with a nice cup of coffee or morning breakfast two will fill you !
