Apple Filled pie cookies
This recipe as been a favorite of the Italian Southern country, because it also has a homemade orange marmalade, the oranges from the southern areas are so sweet and abundant and marmalade is a way to savor the sweetness of the orange canning them (recipe to follow for this later ) These apple filled cookies are soft on the inside by making your own cooked apple filling a hint of the orange marmalade and on the out side a crunchy case,
Golden Apples seam to do the job, sweeten by nature and a great cooking apple keeps it form even when cooked , this recipe wants a dry filling or it would make the cookie to soft.
Easy to make even though the recipe is a little long,
Ingredients
2/4 cup flour
1/3 cup butter
1/3 cup sugar
1 Tbs. Milk
1 egg
1 lemon rind
pinch of salt
For the Filling
2 Large Golden Apples
2 Tbs. Sugar
1 Tbs. Orange Marmalade
1 tsp. cinnamon

For the Crust
Take your soften Butter and sugar cream by hand add the milk, flour, lemon rind, 1 beaten egg and salt, mix this together with your hands and when you get a smooth .
Wrap this up in saran wrap and place in fridge for 30 min.
For the Filling
Wash your apples, peel, and cut into very small squares.
In a small pan add your chopped apples, sugar, and orange marmalade or whatever you have.
On a very low setting cook your apples, your apple mixture will look like a chunky marmalade texture, shut off the pan set a side and add your cinnamon.
Place the oven at 350 Degree
Get a lined parchment cookie sheet
Now lets put these cookies together
Take out of the fridge your dough, roll the dough out on a floured surface and rolling pin to a thin thickness an
I used a 3 inch round cut out.
When you have several rounds place a tsp. or so place in the center of the round the filling mixture then place another round that you have pulled a little place it over the round you placed the filling on this will give it the cracked look this will give it that open look, peeking threw will the apple mixture.
Place this on your cooking sheet leaving a little space in between, cook for 10 min or till the cookie is golden on the extreme edges.
Note: If your apple mixture is thin, your cookie will get softer on the bottom after baking, if you mixture is more dense the cookie will stay crisp. So let your mixture cook
keeping an eye on it the water from the apple varies.
