Carrot Muffins
One Bowl Mix
This is a spin on an Italian version of Carrot muffins and must say as a new entry in the familiy
recipe file my kids love them, not only many friends i give them two just love them
What is nice is that the ratio of the carrots in this keep it moist for days just that they won't last !
I use the new type liners a cardboard paper type that are bigger and taller letting the muffins rise to the top you will get from 10 to 12
In top picture i used paper bags cut them into a square about 6" x 6" cross them form them to
the cupcake pan and poor a large icecream scoop in.
Leave about 1/4 " so it can cup up
Recipe
Ingredients
1 1/3 cup of all-purpose flour
1 tsp. Baking Soda
1/4 Tsp. salt
1 Tsp. of Cinnamon
1/2 cup of Walnuts
(If you are allergic to nuts omit)
2 egg
2/3 Cup Sugar
(i use honey same 2/3 cup and add 1/4 tsp of Backing soda it will even out the acidity that honey contains.)
2/3 Cup vegetable oil
1/2 tsp Vanilla Extract
2/3 Cups of unsweetened Apple Sauce
(my recipe for Apple Sauce below )
or Grated apple or crushed pineapple
1 1/3 Cups of raw carrots (DO NOT USE MORE )
Procedure
In a bowl take your first 5 ingredients and mix to ether well so they all get mixed , set aside
In another bowl take your eggs, sugar blend well with a fork or whisk
Add in your,vanilla then the oil slowly this batter will get a little thick
when incorporated add in the apple sauce (or crushed pineapple) mix again slowly and
add your carrots
Take this point take your dry ingredients and add it to this mixture mix well till everything is incorporated and your done
Place this now into your cupcake liners to 3/4 full or the new version of cupcake liner like mine
Oh by the way the larger liners do not fit a normal cupcake pan , but are sturdy enough to
place on a normal sheet cake or cookie pan .
I like to add the oatmeal on top or nuts for decoration
Bake these at 350 degrees for 20-25 min. till golden do the toothpick or spaghetti check to
see it comes out clean
You can enjoy these simple or make a cream-cheese frosting
