Braided buns with Raisins
(Brioche)


A family favorite, these soft and wonderful flavour lemon scent. 
An easy raised dough recipe , with a 20/20/20 raising time in between 
Enjoy these brioche with or  without dried fruit, or chocolate chips 
Hot from the oven on a Sunday morning with coffee or for tea time! 
We love them the more we make the more we Eat!

Recipe: 
1st phase 
In a small bowl 
 2 oz. of cake yeast or 1- 1/4 oz packet of dry yeast or 2 1/4 tsp of dry yeast 
 1 tbs. of sugar 
 1/3 c. milk lightly scalded 

PLACE THESE 3 INGREDIENTS AND LET STAND FOR 5 MIN.

 2 nd phase ( all ingredients at room temp) 
2 1/3 c. of flour 
3 Tbs. of butter ( no substitute) 
2 1/2 Tbs.
of sugar 
2 eggs 
1 tsp. vanilla 
1 Tbs. lemon peel 

Take all above ingredients place in mixer or in a bowl, butter, sugar, eggs, vanilla, lemon peel, and your yeast that has proofed, mix slowly add your flour till you get an elastic ball that comes away from your mixer bowl, or if you are mixing it by hand it will be elastic and a little sticky. 
Place in a bowl cover and set in a lighted oven for 20 min. 

TRICK ADD A SMALL BOWL OF BOILING WATER INTO THE OVEN TO HELP WITH THE RISE.

At this point your dough will have risen and formed a few air pockets! good! now divide in to 6 pc. or weight them so they are the same size. 
Each piece needs to be dived as per picture into 3 pieces and rolled so you an make the braids. 
Making sure to close both ends. 
Place them on your parchment lined pan, brush them with your egg wash and place them apart enough so when they rise they have room and wont touch each other. 

Place again in lighted oven for 20 min.
These will  rise ready for baking at 350 degrees  for 20 min.

Meanwhile while these are baking prepare your glaze 
3 Tbs. sugar  
3 Tbs. water 
boil this syrup till thicken, when your braided buns come out still warm on that parchment paper 
brush them and top with the sugar granular or leave them just covered in the glaze.

Ricetta in Italiano 

Le Trecce 
Ricetta; 
per il primo  impasto 

25 gr. di lievito di birra 
1 cucchiaio di zucchero 
80 ml. di latte tiepido
questo metti in una ciotola per 10 min.

per il secondo impasto 

300 gr. faina 
40 gr. di burro fuso 
30 gr. di zucchero 
2 uova 
1 bustina di vaniglia 
1 presa di scorza di limone grattugiato di arancia 

per la glassa 

3 cucchiaio di zucchero 
3 cucchiaio di aqua 
granella di zucchero per la decorazione 

prendete il primo impasto in una ciotola , latte tiepido, zucchero, copritelo con cellophane e fallo stare 10 min. fino avere una schiuma sopra. 

Unite, poi il burro fuso, zucchero,  le uova,
