Hazelnut Bites
8 tbs. Butter softened
¾ cup confectioners sugar, sifted 
1 cup flour 
¾ cup ground hazelnuts 
1 egg yolk 
1 egg white 
Blanched whole hazelnuts for decoration 
This makes 26 cookies about 2” wide when done 
Bake at 350 for about 10 -12 min,or until brown 
Preheat the oven at 350 degrees
Line a baking sheet with parchment paper. 
Cream the butter and sugar until light and fluffy.
Add the flour, ground hazelnuts and egg yolk, this will 
Form a batter a little sticky. 
Take about a teaspoon full roll into a ball, place on sheet pressing 
A hazelnut on the top after you have placed it in the yolk . 
This will allow the hazelnut to stick. 
Since we have a soft cookies recommend you place the sheet into the 
Fridge about 20- 30 minutes then into the oven , this will give a firmer 
cookie or else it will spread to much. 
Bake at 350 for 10 min or till golden 
Remove and let cook on a cookie rack
