Chinese Beef Fried Rice
Recipe:
For 2 people, you can prepare the ingredients ahead of time and refrigerate them till needed.
You will need a Wok or a Pan
1 ¾ cups of white rice (or brown)
½ cup of diced red pepper
½ cup of diced celery
½ cup of sliced fresh onion
½ cup of sliced or diced carrots
1 cup of frozen peas (cooked)
½ lb. of thinly sliced beef
2 eggs (you will fry)
1 tsp. Sliced ginger (optional)
3 tbs. Olive oil
½ cup of Soya Sauce
¼ cup of Soya Sauce for marinating meat
Marinating:
Place in a small bowl the meat strips, add ¼ cup of Soya Sauce set aside.
Prepare:
Take your frozen peas and give them a boil, set aside
Beat those 2 eggs, in a pan make a thin frittata, then slice them up
Dice your red pepper, celery,
Slice your, carrots, fresh onion
(If you are using the ginger slice that also)
Place these in a large plate or small individual bowls.
To your pan/wok add 3 tbsp.of oil make sure your pan/wok is very hot, add your meat that you have marinated, it will cook fast, once it's cooked take it out and set aside.
Now to this pan is still hot, add your vegetables one at a time, first your peppers, celery, carrots, onions, egg strips, peas,(ginger if you like) add about 2 tbs. Of Soya Sauce. Stir and serve!
These vegetables will be done fast, add your meat back in adding a little more soya sauce to taste, Voila! Its done!
